Dad's Homemade Biscuits

Dad's homemade biscuits are an easy favorite with their flaky layers. They're soft and fluffy and melt in your mouth.


  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/3 cup unsalted butter. If using salted, decrease salt by 1/4 teaspoon.
  • 3/4 cup milk
  • 1 beaten egg, optional*


  1. Preheat oven to 400*F
  2. Sift or whisk flour, baking powder and salt together. 
  3. Cut in butter to dry ingredients
  4. Pour milk on top of dry ingredients.
  5. Be VERY CAREFUL TO NOT OVERMIX when you add the milk. Using a fork, lift from the bottom and turn the dough using a folding motion. Do not mix. It is worth the extra minute of folding to not over mix. Over mixed biscuits are tough and chewy instead of light and fluffy. The dough will be a bit sticky.
  6. Once a dough has formed, sprinkle a counter or flat workspace with a generous amount of flour. Being very gentle and very careful not to handle the dough too much, roll the dough out to about 1/4" thick.
  7. Sprinkle a little flour over the rolled out dough. Brush your hand over to spread the flour evenly. Gently fold the dough in half, sprinkle and smooth some more flour, then half again. That is where the layers come from.
  8. Now very very gently press/roll the dough out to about 3/4" thick.
  9. Using a biscuit or cookie cutter cut out biscuit rounds.
  10. Bake at 400*F for 8-12 minutes. Biscuits are done when the edges are juuuuuuuuuust starting to turn golden along the edges. They will still be mostly white.

*For that golden brown look, whisk an egg and spread over the biscuit tops about 5 minutes into bake time, keeping the biscuits out of the oven for as short of a time as possible.


These are best fresh, but store well in an airtight container for up to 4 days. Microwave for 8-12 seconds before eating if they aren't fresh.
