Easy, mini American Flag fruit pizzas!

4th of July Dessert

This 4th of July Dessert is a light soft sugar cookie topped with a creamy, lightly lemon-y topping and fresh fruit. Perfect for Independence Day!

Quick & Easy to make!

Stuff to do:

make the frosting

slice the fruit

make, chill and bake the cookie dough

gather ingredients

Cream together the butter and sugar on high speed until light and fluffy, about 2 minutes.

Add the eggs and vanilla and beat another minute. Add the dry ingredients and mix just until combined.

Chill the dough at least one hour. Lightly flour a surface and roll out the dough about 3/8" thick for a soft 4th of July Dessert or thinner for a crisp cookie.

Place on a parchment lined baking sheet and bake at 400*F for 6-8 minutes. Until the tops are matte and the edges are set. Don't wait for these to turn golden!

Beat together the softened cream cheese and butter on high until smooth, 1-2 minutes. Add the lemon juice, lemon zest and vanilla and mix. Add powdered sugar and beat until smooth

Cut fruit into shapes to make different patriotic shapes. Frost the 4th of July Dessert and decorate! Decorate them yourself or let people make their own!
