We love that you can make a huge batch of this tasty blueberry compote and save some in the refrigerator and freeze the rest for another time. It's great for breakfasts and desserts.

Add fresh blueberries, sugar and lemon juice to a sauce pan.

On medium heat bring the blueberries to a low simmer. Constantly stir as the blueberries begin to breakdown and release their juices.

Keep on the heat until you get the desired texture. It should be like a syrup with chunks of blueberries.

Serve over the top of desserts or with breakfast like french toast, pancakes, waffles and even oatmeal.
