Cranberry Cheesecake

Perfect for Christmas, Thanksgiving and more this smooth and creamy Cranberry Cheesecake is accented with white chocolate and a pop of tangy cranberry, it is absolutely delicious!!

Whisk together lemon juice, corn starch and water. Combine with sugar and cranberries over medium heat. Bring to a boil and stir until thickened and no longer milky looking.

Melt the butter and crush the graham crackers then combine. Press into a 9" springform pan.

Beat 1/3 cup sugar, corn starch and one brick of cream cheese for 3 minutes. Add remaining cream cheese one brick at a time, mixing well after each addition.

Add the remaining sugar, beat, add vanilla, beat. Add eggs one at a time. Stir in cream. Melt white chocolate then stir in.

Place batter in pan on crust. Add cranberry sauce by dropping in spoonfuls on top of batter. Press in with a damp finger, then swirl with a knife in figure 8 patterns..

Place in a water bath and bake at 350 for 70-80 minutes. Top with sugared cranberries if desired, or whipped topping
