Beat one8 oz. brick cream cheese, 1/3 cup sugar on medium low for 3 minutes, scraping down the sides after each minute. Add the remaining cream cheese 1 brick at a time, beating for 2 minutes after each addition.
Add the remaining sugar and beat another minute. Increase the mixer speed to medium and add the eggs, 1 at a time for 30 seconds each, scraping down the sides after each one.
Pour Philadelphia cheesecake batter on top of crust and place in a water bath. Bake at 350*F for about 75 minutes, until the top and edges have set and the inside is still a little wobbly.
