Blueberry Salad with Feta

Labor Day

Getting in those last minute summer feels, with fall around the corner, with this Labor Day  salad. Made with fresh blueberries, strawberries, topped with feta and homemade candied almonds.

Ready in 10 minutes!

INGREDIENTS

•baby spinach •blueberries •strawberries •feta •almonds •poppyseed dressing •cinnamon •sugar •water

Start by candying almonds by heating cinnamon, sugar, and water in medium sauce pan. Add the almonds and stir until the liquid evaporates and surgery coating

Place the sugar coated almonds on a parchment paper line sheet pan to cool while you assemble the salad.

Slice and wash fruit. Slice the strawberries into bite sized pieces.

Place spinach greens in a salad bowl. Top with sliced strawberries, blueberries, crumbled feta cheese and cooled candied almonds. Top with your favorite poppyseed dressing and enjoy!

Yummy!! So fresh and delicious. This is my favorite summer salad!
