Lemon Poppyseed Muffins with Yellow Squash

Lemon Poppyseed Muffins with Yellow Squash are the perfect summer muffin. A great recipe to use your garden fresh squash and they taste amazing as a snack or easy breakfast. 

A Perfect Summer Muffin


– all purpose flour – white sugar – baking soda –salt – egg –  butter –  milk – lemon juice – vanilla – lemon zest - optional – poppyseeds – yellow squash

Grate the yellow squash with a cheese grater. Squeeze lemons for lemon juice if using fresh lemons. 

In a mixing bowl add together the dry ingredients, mix. Add the wet ingredients in a separate bowl and mix well. 

Mix the wet and dry ingredients together in a stand mixer. Add the grated yellow squash and poppyseeds. Mix until well incorporated. 

Distribute the dough evenly in a paper lined muffin tin. This recipe makes 12 muffins. Bake muffins for 15 minutes in a preheated oven. 

Enjoy these delicious lemony poppyseed muffins with yellow squash. The perfect taste of summer. 

My daughter made these and they were goooood. Texture was almost like a cupcake, light and airy. YUM!
