Yummm these soft and chewy Raspberry Cheesecake Cookies are a great Subway copycat, made with cream cheese, white chocolate chips and freeze-dried (or fresh) raspberries!

Beat butter and cream cheese together on medium speed until smooth.

Step 2

Add the granulated sugar and brown sugar and beat on high for 2 minutes until light and fluffy.

Step 3:

Add the vanilla and egg and beat on high an additional 30 seconds.

Step 4:

Add the flour, baking soda and salt and mix on low  until just combined. Add white chips and mix slightly. Fold in the freeze-dried raspberries.

Step 5:

Place on a parchment lined baking sheet and bake at 350*F for 10 minutes. Enjoy!
