We are loving this simple red beans over rice topped with a fresh homemade pico. Made with red beans and kielbasa this is a great weeknight meal for any occasion.

In a medium saute pan over medium heat, heat olive oil and saute onions. Add kielbasa and red beans to the pan.

Add chicken broth to the saute pan with red beans and kielbasa mixture and simmer until reduced by half.

Chop cucumbers, bell peppers, tomatoes and onions and put in a bowl with vinegar, salt and pepper.

Put the red bean and kielbasa mixture on top of a bed of rice.

Top with fresh pico and enjoy a tasty homemade meal.
