Make Snickerdoodles without cream of tartar by preheating the oven to 400F. Cream the butter and sugar together on high for 2 minutes.
Add the eggs and vanilla and beat one more minute, and scrape down the edges.
Add the dry ingredients: flour, salt then instead of cream of tartar and baking soda, use baking powder.
Combine cinnamon and sugar in a bowl, and roll dough balls into the mixture.
Place dough balls on a parchment lined baking sheet and bake 8-10 min. until the edges are set and the tops are matte.
