Preheat oven to 375* Combine the flour, sugar, cinnamon, baking powder and salt together in a bowl. Set aside. .
Peel and grate apples.
Pour the wet ingredients into the dry ingredients and combine using a fork and a folding motion. After a few folds, add the grated apple and continue folding. Only fold until no flour streaks remain!
Place apple muffin batter into a greased or lined muffin tin. Bake at 375* for 18-22 minutes. The muffins will just start to turn golden on the edges and a toothpick should come out clean.
