Heat oil over medium heat. Add chicken and cook until it reaches an internal temperature of 165* F. Set chicken aside.
Again heat oil over medium heat. Cook the onions and garlic 5-7 minutes until softened.
Add the hominy, chipotle peppers, chicken stock and tomatoes. Bring to a boil and simmer for 3 min. Remove from heat and add the lime juice and cilantro. Stir in the chicken and cook until heated through.
