Strawberry Lemon Cookies
Tart flavorful lemon cookies topped with strawberry frosting. A punch of flavor with no artificial ingredients!
Cream together butter and sugars on high for 2 minutes. Add eggs, vanilla and lemon zest and beat another minute until light and fluffy.
Blend in the lemon juice. Add the flour, salt, baking powder and baking soda and mix until just combined. Bake at 350* for 9-10 min.
Blend or food process freeze-dried strawberries.
Beat butter until light and fluffy, 2 min. Add strawberries, vanilla, lemon juice, milk and powdered sugar and beat to combine.
Frost cooled cookies and enjoy! Perfect for spring, summer or when you want to feel like spring in the middle of winter ;)
