On medium heat, saute onions in butter until golden brown. Add flour to make a light roux.
Add chicken broth and half and half and bring to a boil. Add the chopped cauliflower and simmer.
Add liquid and softened cauliflower to a high speed blender and blend until smooth.
Add blended soup back to the pot and stir in pepper jack cheese and sharp cheddar cheese. Mix until smooth.
Serve plain or top with bacon and chives. Enjoy!
