Cut chicken breast into bite sized pieces. Coat in a cornmeal, salt and pepper mixture.
Cook the cornmeal chicken in a heated skillet with olive oil. Flip the chicken over when golden brown on one side and continue cooking until chicken is cooked through.
While the chicken cooks, mix together the orange sauce. Mix orange juice, vinegar, soy sauce, crushed red pepper, garlic, ginger, and cornstarch.
Add the sauce to the cooked chicken and bring to a boil, constantly stirring.
Once the sauce thickens, remove from heat and serve on top of a bed of rice. ENJOY!
