Pumpkin Donut Muffins are an easy baked recipe coated in cinnamon sugar made with pumpkin spice and puree. Great for Halloween breakfast and after school snacks. Resembles a giant donut hole.

In an electric stand mixer add the pumpkin puree, sugar, egg, and milk. Mix until smooth.


Add the flour, baking powder, salt, and pumpkin spice. Mix until a smooth batter is formed.


Put 1/8 cup of batter into each muffin tin. Make sure the muffin tin is greased. Do not use cupcake liners, they will stick to the muffin.


Bake at 350*F for 15 minutes. Let them cool and remove from the muffin tin.


Melt the butter and dip the top and sides of the muffin in the butter.


Immediately dip in the prepared cinnamon sugar mixture. Coat the top and the sides.


Enjoy this delicious pumpkin donut muffin warm or chilled!
