How to Roast Zucchini

Crispy on the outside, tender on the inside we'll teach you all the tricks for this never soggy roasted zucchini!

Ready in under 20 minutes!

Stuff to do:

-season the zucchini and bake!

-gather ingredients

-slice zucchini lengthwise

-zucchini -cooking oil -finely grated parmesan -Italian Seasoning -garlic powder -salt & pepper


-Preheat oven to 425*  -slice zucchini into half lengthwise, then half again making spears. Or, cut into 3/8" rounds.


Place zucchini in a bowl and drizzle the oil on top. Toss or mix with a spatula to combine.


Add spices then toss or stir to combine.  Add finely grated fresh parmesan and toss to combine.


Place on a metal cooling rack on a baking sheet to prevent it from getting soggy.  Bake for 12-14 minutes until they just start to get tender. Then broil for 2 minutes.

This roasted zucchini was cooked to absolute perfection and had great flavor!
