Chop your potatoes, and kielbasa into bite sized pieces. Make the potatoes on the smaller end because they are going to take the longest to cook.
Chop the onion into medium sized chunks. Keep these on the bigger side in order to avoid them from getting too soft while the other ingredients cook.
Split the corn on the cob into 2 to 3 pieces. Splitting them in threes because they fit in the tin foil packet better.
Tear 6 pieces of tin foil, about a foot long each. Use two pieces per tin foil packet in order to prevent leaking and spills.
Place the potatoes, kielbasa, onion, and corn in the center of three pieces of tin foil.
Put colossal sized shrimp on top of the ingredients.
Season with your favorite cajun seasoning (this is mine!) and top with one tablespoon of butter cut in fourths.
Wrap the ingredients in the first tin foil sheet. Flip the seam over and place the packet in the center of the second tin foil pieces and wrap again. This way the original seam is protected by the second packet.
Cook on the grill over medium heat for 20 minutes, with the grill lid closed. Flip over and cook for another 15 minutes, or until potatoes are tender and shrimp is fully cooked.
Notes
Three packets go fast! This meal can easily be doubled, tripled, quadrupled...to fit the needs of your group.
I like to use the colossal shrimp because when smaller shrimp is used, it can dry out from the heat. I also use frozen shrimp. It's cook time matches well with the rest of the ingredients.
My favorite way to prepare this meal is to have the ingredients in individual bowls. Then in an assembly line, have everyone add each ingredient to their own tin foil packet.
OR add all of the ingredients, excluding the shrimp, into a large bowl and mix it all together with the seasoning. Evenly distribute the mixed ingredients between each foil packet. Add the shrimp and butter on top, seal, and cook.
We love camp fires and have made these meal on a hot bed of coals. Cook times will vary depending on how hot your fire is. We usually can stick with the same time as the grill. 20 minutes, flip, 15 minutes, or until potatoes are done. With varying temperatures of a fire, you may have burned areas on your foil packet!
Another fun way to eat this meal is family style. Dump all the cooked Cajun Shrimp Tin Foil Dinners on a large sheet pan and let everyone enjoy!
Don't have a grill or campfire? Put these guys in a preheated oven of 420 degrees and cook for 40 minutes.
