Notes
Store in an airtight container for up to 3 days. Can be stored at room temperature or in the refrigerator. I personally prefer to eat them cold! This frosting recipe is a great amount for thick frosting on a pan of 8x8 brownies or a regular thickness on a 9x9 pan of brownies. If making brownies in a 9x13 pan, use 1.5x the amount using the following measurements: 1 ½ cups butter, 2 ½ teaspoons peppermint extract, 3 ⅓ cups powdered sugar. Follow directions as otherwise indicated.Use peppermint extract instead of peppermint oil or flavoring for best results.Wait for the brownies to cool completely before frosting or you'll end up with a mess!Use a metal pan for a better rise and more even baking. They also provide a straighter edge. Glass pans make a more dense brownie and can bake less evenly. For an even easier recipe: buy store bought vanilla frosting and add 1 teaspoon peppermint extract.
