A delightful Strawberry Pie made with fresh strawberries and a homemade strawberry glaze without jello. A homemade no-bake pie perfect for holidays from the 4th of July, Valentine's Day, and Thanksgiving.
6cupsstrawberriesabout 3 pounds, washed and hulled
¾cupsugar
3Tablespoonswatercold or cool
2Tablespoonslemon juice
¼cupcorn starch
¼teaspoonvanilla
Instructions
Bake pie crust according to directions.
Rinse, dry, hull and quarter 3 ½ cups of strawberries. Pat dry and set aside for later.
Rinse, hull and roughly chop another 2 ½ cups strawberries. Crush the strawberries using a potato masher or pastry blender.
In a bowl, whisk together the cool water, lemon juice, and corn starch. Refer to the process photos in the post.
¾ cup sugar, 2 Tablespoons lemon juice, ¼ cup corn starch, 3 Tablespoons water
In a saucepan over medium heat, add the crushed strawberries then stir in the sugar then the corn starch mixture. Bring to a boil over medium heat, stirring constantly. Boil for about 2-3 minutes, stirring constantly. The mixture should darken and become translucent. Remove from heat, and stir until it stops boiling then stir in the vanilla.
¼ teaspoon vanilla
Pour glaze over the chopped strawberries and mix to combine. Place mixture in cooled pie crust and refrigerate until set up, about 4 hours.

Notes
Use red, fully ripened strawberries that are full of flavor. The main flavor of your pie will come from your strawberries, so it's important to choose the best ones you can.
It's important to use cold or cool water, as the corn starch will dissolve much more easily.
Using corn starch helps thicken the strawberry glaze. We use corn starch instead of jello to give it a real strawberry taste.
Store in the refrigerator and eat within 3 days for the best taste and texture.
