8ouncescheddar cheeseAbout 2 ½ cups grated, I used sharp. Don't use pre shredded, see note 1 below.
⅓cupgreen onionchopped
2teaspoonsworcestershire sauce
2teaspoonslemon juice
¾teaspoongarlic powder
¼teaspoonblack pepper
½cupchopped pecansoptional, see note 2.
Instructions
Beat softened cream cheese with an electric mixer and the paddle attachment until perfectly smooth. This will ensure you don't have any lumps in the cheese ball.
Add the grated cheese, chopped green onion, worcestershire sauce, lemon juice, garlic powder and pepper and chopped nuts if using. Stir with a spatula to combine or mash together with a large fork. Adjust seasonings to personal preference.
Using your hands, form cream cheese mixture into a ball, then wrap the whole thing in plastic wrap and shape the ball again if needed. Chill at least 4 hours and up to over night.
Notes
Because of the anti-caking powder they put on shredded cheese, we highly recommend you shred your own cheese. It could ruin the texture of the cheese ball and make it so that it doesn't stick together well.
You can also use slivered almonds, or chopped walnuts or no nuts at all. Some people like the added crunch to their cheese ball. You can also roll the ball in the nuts, if desired.
