Quick and easy DIY homemade Copycat Chipotle Fajita Vegetables made with green pepper, red onion, and lightly seasoned to perfection. A great family dinner idea from your favorite Mexican Grill in the comfort of your home.
Heat oil in a large skillet over medium high heat. Slice onion and peppers into long, somewhat thin strips. Add to the hot oil and cook, stirring occasionally for 8-10 minutes until the veggies become al dente and start to caramelize. Stir in the oregano, salt and pepper and stir until well combined. Remove from heat, serve and enjoy!

Chipotle uses Mexican oregano, but it can be hard to find. I found some at our local Latin American market. If you don't have any, it still works out great with regular oregano, so don't sweat it!
Make sure you don't over cook these veggies! When you got to Chipotle they are so perfectly crisp yet tender. If you over cook them, you'll lose that wonderful al dente texture.
Wait to add the seasonings until directed in the recipe, or the oregano may start to stick to the bottom of the pan.
