How to make Copycat Chipotle Fajita Veggies
So how do you make that crisp yet tender vegetables we all love? Learn how to make our favorite fajita vegetables in just 3 easy steps!

- Begin by chopping the red onion and green bell peppers. Over medium heat, in a large skillet, heat the oil. Add the vegetables.

- Stir while the vegetables cook. After about 8-10 minutes the vegetables should be tender yet still have a crisp texture. Remove from heat and add the spices.

- Toss the vegetables until they are well seasoned. Serve warm.
Hint: Wait to put the spices on until the end or else the oregano will stick to the bottom of the pan.

Copycat Chipotle Fajita Veggies
Ingredients
- 2 Tablespoons cooking oil I used avocado
- 1 red onion medium, sliced
- 2 green bell peppers
- ¾ teaspoon Mexican oregano see Note 1
- ¼ teaspoon salt or to taste
- ¼ teaspoon pepper
Instructions
- Heat oil in a large skillet over medium high heat. Slice onion and peppers into long, somewhat thin strips. Add to the hot oil and cook, stirring occasionally for 8-10 minutes until the veggies become al dente and start to caramelize. Stir in the oregano, salt and pepper and stir until well combined. Remove from heat, serve and enjoy!
Notes
- Chipotle uses Mexican oregano, but it can be hard to find. I found some at our local Latin American market. If you don't have any, it still works out great with regular oregano, so don't sweat it!
- Make sure you don't over cook these veggies! When you got to Chipotle they are so perfectly crisp yet tender. If you over cook them, you'll lose that wonderful al dente texture.
- Wait to add the seasonings until directed in the recipe, or the oregano may start to stick to the bottom of the pan.

Substitutions and Variations
While this recipe is straight forward, feel free to try different colored peppers like red, orange, or yellow. You can also substitute the red onion for yellow or white onion, though the taste and texture is better with the red onion.
Mexican Oregano is preferred to traditional oregano because it has a more citrusy taste compared with the herb-tasting regular oregano. But it can be hard to find so if you can't find it, don't sweat and use regular!
Storage
This recipe is best eaten the day of. This way, the vegetables maintain their tasty texture. If you do have leftovers, be sure to store them in an air tight container in the refrigerator. When ready to eat again, reheat in the microwave for 30 seconds at a time.
Do not freeze the leftovers! They will be very mushy once they thaw.
