Melt butter in a small microwave safe dish. Once melted, mix the pecan halves with the butter until coated.
Place buttered pecans, evenly spread out, on a parchment lined baking sheet. Roast for 8-10 minutes. Remove from oven and cool.
Once the pecans are cooled, melt the milk chocolate in a microwave safe dish. Melt for 30 seconds at a time, stirring in between each 30 second interval until fully melted. Add coconut oil to the melt chocolate and mix. See photos above for a great visual on this.
Add the roasted pecan halves to the melted chocolate bowl and mix until well coated. Individually take out each pecan, with a fork or clean hands, and place on a clean parchment paper. Let the chocolate harden completely.
Notes
Make sure to melt the chocolate in small intervals so you don't over melt the chocolate! The chocolate will become chalky and hard to work with.
Use dark chocolate or white chocolate according to your preference.
