Line a baking sheet with parchment paper or a silicone mat. Preheat the oven to 420 degrees
In a large bowl combine black beans, chopped cauliflower, sweet potatoes, and onions. Toss olive oil with the black bean and cauliflower mixture until well spread
In a small bowl combine all spices. Toss spice mixture on the olive oiled vegetables until even.
Spread the vegetable mixture evenly on the parchment paper lined baking sheet. Bake for 20 minutes or until vegetables are tender and start to brown on the edges. Fill soft tortillas with filling and top with your favorite toppings: avocado, cheese, lettuce, and salsa etc.
Notes
In a time crunch, skip the spices and add 1 tablespoon of your favorite taco seasoning.
