Who's ready to up their Taco Tuesday Game? I love tacos! Can I get an amen?! I could eat tacos at least once a week and be completely satisfied. I love mixing up my taco game with fish tacos, air fryer chicken tacos, jerk chicken tacos, and these amazing Roasted Cauliflower and Black Bean Tacos. And of course, all tacos are great with our guacamole.
YUM! These veggie tacos just hit right. Packed with flavor and nutrients. They are great alternative for those that don't eat meat, or just a good way to go meatless for the night. My family, especially my children, eat these up!
Ingredient Run Down:
These flavor bursting tacos are filled with:
- Roasted Cauliflower
- Black Beans
- Sweet Potatoes
- Onions
Best of all, these tacos are quick and easy to prepare! First you are going to want to chop all of your veggies into small, bite sized pieces. The smaller the pieces, the more blended the combination seems, and the quicker the vegetables will cook.
After the sweet potatoes, cauliflower, and onions are chopped add them together in a large bowl. Rinse and drain a can of black beans and add to the large bowl as well.
How to make Roasted Cauliflower and Black Bean Tacos
In a small bowl combine the spices and mix together. Sometimes I'm in a pinch and use 1-2 tablespoons of Taco seasoning instead of all the spices. The outcome is still delicious, but I prefer adding together my own seasoning. I like being able to add additional flavors of my choice, and I prefer less salt than most taco seasonings have. Use your favorite taco seasoning, or the recommended spices (you won't be disappointed if you do!).
Coat the large bowl of vegetables with olive oil, and toss until evenly coated. Next, toss the vegetables with the spices until evenly mixed.
Place vegetable mixture on a baking sheet lined with parchment paper, or I like to use my silicon mat (this one!). Roast the vegetables until tender, and golden brown on the edges.
Fill soft tacos with vegetable mixture and top with your favorite taco add ons. I love topping these tacos with queso, hot sauce, avocado and lettuce, YUM! Enjoy every bite of these Roasted Cauliflower and Black Bean Tacos!

Roasted Cauliflower and Black Bean Tacos
Ingredients
- 1 cup cauliflower chopped into bite sized pieces
- 1 can black beans
- ½ cup onion about 1 medium onion
- 1 cup sweet potatoes chopped into bite sized pieces
- 1 teaspoon cumin
- 1 teaspoon garlic
- 1 teaspoon oregano
- ½ teaspoon paprika
- ½ teaspoon chili powder
- ½ teaspoon onion powder
- ½ teaspoon salt more by preference
- 2 tablespoons olive oil
Instructions
- Line a baking sheet with parchment paper or a silicone mat
- Preheat the oven to 420 degrees
- In a large bowl combine black beans, chopped cauliflower, sweet potatoes, and onions.
- In a small bowl combine all spices
- Toss olive oil with the black bean and cauliflower mixture until well spread
- Toss spice mixture on the olive oiled vegetables until even
- Spread the vegetable mixture evenly on the parchment paper lined baking sheet
- Bake for 20 minutes or until vegetables are tender and start to brown on the edges
- Fill soft tortillas with filling and top with your favorite toppings: avocado, cheese, lettuce, and salsa etc.
Notes
- In a time crunch, skip the spices and add 1 tablespoon of your favorite taco seasoning.
