What goes in Mediterranean Chicken?
This Mediterranean-style chicken is perfectly seasoned with garlic, balsamic vinegar, tasty spices and then tossed with fresh vegetables like spinach and cherry tomatoes. Learn how to season the chicken for a tasty result.

- Oil- Use olive oil for the best Mediterranean flavor.
- Chicken- We use boneless skinless chicken thighs but you can also use chicken breasts. All our taste testers preferred the added flavor that chicken thighs offer. You could even try it with wings.
- Seasoning- The chicken rub is made of salt, pepper, Italian seasoning, and garlic powder.
- Chicken Broth- Use standard chicken broth or use Better than Boulion to make your own broth. B
- Balsamic vinegar- A lot of the flavor comes from the sweet and sour flavor of balsamic vinegar.
- Lemon juice- Fresh squeezed will give you a stronger flavor but bottled works as well.
- Minced garlic- Minced garlic will give a stronger flavor than garlic powder.
- Cherry tomatoes- Make sure to use halved tomatoes. It's important to use cherry tomatoes for the right texture.
- Spinach- We love to pack in the spinach! It wilts to a fraction of the volume of uncooked spinach so the more the merrier!
- Red onion- Slice thinly to not overpower the dish with its texture.
- Parsley or basil- Garnish with chopped parsley or basil.
- Feta- Feta can add a lot of saltiness to the dish so if you want to use a lot of feta, which we love, reduce the salt slightly.

How to make Mediterranean Chicken
Learn how to cook Mediterranean Chicken with these easy-to-follow step-by-step process photos.

- Mix the spices together and season the chicken with the rub. Heat olive oil in a large skillet over medium-high heat and place chicken in the pan and sear on each side. Cook for about 1-2 minutes per side.

- Reduce the heat to medium. Add chicken broth, balsamic vinegar, and lemon juice. Simmer, cover, and cook chicken for about 5-7 minutes then flip.
- Add thinly sliced onions and minced garlic.

- When the chicken is cooked all the way through, remove it from the pan and set aside. Add tomatoes and spinach cover and cook for 3 minutes, then stir until the spinach is completely wilted

- Add the chicken back and serve!
Hint: This dish tastes great the day of but it tastes even better than longer the chicken marinades in the sauce. It deepens the flavor, so leftovers are amazing!
Cooking Methods
While stovetop is our favorite method of cooking this meal, it makes it quick and easy, you can also grill the chicken and then prepare the broth and vegetables on the stovetop. Throw all of the ingredients in a slow cooker and cook on low heat for 4-6 hours.
You could also cook the chicken on a sheet pan or air fryer with the vegetables, making the broth separately and adding it all together when the chicken is cooked all the way through.

Side dishes to go with Mediterranean Chicken
This aromatic chicken with lemon and herbs makes a great weeknight dinner. Serve it with some of our favorite sides for a complete meal. You'll love it with a side of roasted potatoes or our smashed potatoes recipe. It also pairs great with a green leaf salad and a dinner roll.
This dish tastes amazing on its own but it also tastes great on a skewer like a kebab. You can serve with greens and grains like quinoa or even on a bed of rice. It also tastes amazing in a wrap, sandwich, or pita. We love how versatile the leftovers are.
Try serving it with zucchini noodles, or even orzo pasta. Add a creamy texture and serve with risotto.
Storage
Store cooked chicken and vegetables in an air-tight container in the refrigerator for up to 5 days. Be sure to reheat all the way through in the microwave, air fryer, or oven.
This makes incredible leftovers, almost better than fresh because the flavors sit. Add leftovers to our Mediterranean Bowl.

Top tip
Pack in that spinach! It will seem like you're adding a lot of spinach but once it gets hot it will wilt and it won't seem as much.

Mediterranean Chicken
Ingredients
Chicken Rub:
- 2 Tablespoons olive oil
- 2 lbs boneless, skinless chicken thighs or breasts, see note 1 below
- 1 ½ teaspoons salt
- 1 ½ teaspoons pepper
- 1 ½ teaspoons Italian seasoning
- 1 teaspoon garlic powder
Sauce:
- ½ cup chicken broth
- ¼ cup balsamic vinegar
- ¼ cup lemon juice fresh squeezed for best results
- 1 Tablespoon minced garlic
- 1 ½ cups cherry tomatoes halved
- 2-3 cups spinach packed, see note 2
- ½ large red onion thinly sliced
- ⅓ cup parsley or basil chopped
- feta for topping, if desired see note 3
Instructions
Rub and Sear chicken:
- Heat olive oil in a large skillet over medium high heat. Trim any excess fat (if desired) from the chicken. Combine salt, pepper, Italian seasoning and garlic powder together in a bowl with a small whisk or spoon. Sprinkle seasoning on chicken and press and rub into the chicken until it is evenly coated.
- Place chicken in pan and sear on each side- cooking for about 1-2 minutes per side.
Cook and make sauce:
- Reduce heat to medium. Add chicken broth, balsamic vinegar, and lemon juice. Bring to a simmer, cover and cook chicken for about 5-7 minutes then flip. Add thinly sliced onions and minced garlic and press down into the sauce. Cover and cook an additional 5-7 minutes, until chicken reaches 165° F and is done. Remove chicken and place on a plate or platter. Add tomatoes and spinach and cover and cook for 3 minutes, then stir until the spinach is completely wilted. Add the chicken back in and serve!
Notes
- We absolutely love the added flavor or chicken thighs in this recipe. All of our taste testers preferred it with thighs over breasts. If all you have is chicken breasts on hand, feel free to use those too!
- Make sure to pack your spinach! We like ours with a lot of spinach, so we like to do 3 cups. 2 cups will still give you plenty.
- We love feta- if you use a lot of feta, reduce the salt by about ¼ teaspoon, as feta is a salty cheese.
- Store leftovers in an airtight container in the refrigerator for up to 5 days. We love these leftovers, the flavors only deepen over time.
