A great Starbucks copycat cinnamon dolce syrup or cinnamon simple syrup made with easy ingredients. Made perfect for drinks like hot chocolate, coffee, teas, and steamers.
Bring water and cinnamon sticks to a boil over medium high heat. Turn down to a simmer and simmer for 10 minutes. Remove cinnamon sticks. Add brown sugar and granulated sugar then stir until sugars are dissolved.
Remove from heat and stir in vanilla. See pictures above for a visual reference.

Store in an airtight container in the refrigerator for up to 2 months.
Be careful not to stir once the sugar is dissolved. This will enable you to store it longer without it crystallizing.
Make with ground cinnamon by reducing the water to 1 cup. Add the sugars and ground cinnamon, stir until the sugars have dissolved, bring to a boil then remove from heat. Allow to cool 1 minute then stir in the vanilla.
While testing this recipe we found that the cinnamon flavor was better when made with cinnamon sticks, but you can absolutely make it with ground cinnamon.
During the fall we love to substitute the vanilla for maple for a delicious cinnamon maple syrup.
To make a thicker syrup for pancakes, etc., double the sugars and make as directed.
