- Cinnamon Sticks- Fresh cinnamon sticks give the best flavor after they are boiled. They also give your home a great smell.
- Granulated White Sugar- The base of this simple syrup to give it that sweet flavor you love.
- Water-You'll need this to boil the cinnamon sticks and to combine with the other ingredients.
- Brown Sugar-Helps to give the syrup a caramel flavor along with the cinnamon. We tested this recipe over and over to find the perfect balance of white and brown sugar to give it the best flavor and the best texture. We found we couldn't use too much brown sugar or it didn't last as long in the refrigerator.
- Vanilla-Vanilla extract is such a great balance of flavor and adds to any dish.

How to Make Cinnamon Dolce Syrup

- Bring a sauce pan of water to a boil. Add the cinnamon sticks.

2. Boil for 10 minutes, allowing the cinnamon sticks to release it's fragrant spice. Remove the sticks.

3. Add the white and brown sugar to the cinnamon water. Stir until the sugar is dissolved.

4. Remove from heat and add in the vanilla. Add to any drink like coffee, hot chocolate, and tea.
Hint: Feel free to simmer the cinnamon sticks an additional 10 minutes for a deeper cinnamon flavor. Just make sure you add an extra ¼ cup water to make up for water evaporation.

Variations
We love switching things up when we're in the kitchen. Try any of these variations for something a little different.
- Apple- Replace ½ the water and ½ the white sugar with apple cider. This will give it a tasty apple cinnamon flavor.
- Vanilla-Make the vanilla a stronger flavor instead of a complimentary flavor by doubling the vanilla extract.
- Maple- make this with maple extract instead of vanilla for a rich cinnamon maple flavor.
- With Ground Cinnamon-Instead of using cinnamon sticks, us ¾ teaspoon ground cinnamon instead. We found while testing this recipe that the flavor was a higher quality flavor when made with cinnamon sticks. You can absolutely make this with ground cinnamon, but it won't taste quite the same.
- Cranberry- Cinnamon cranberry is a tasty winter and Christmas flavor. Boil ½ cup cranberries with the cinnamon sticks and remove when you remove the cinnamon sticks.
- Ginger- Boil ½ inch cut of ginger to the boiling water when the cinnamon sticks are boiled. Remove at the same time you remove the cinnamon sticks.

Helpful Hints
To achieve a thicker syrup suitable for pancakes, waffles, crepes, or drizzling over cakes and pastries, simply double the sugar in the recipe and proceed with the regular instructions. This modification will create the thicker consistency, perfect for elevating your breakfast or dessert experience.
How to Serve
- For drinks-This taste great in cinnamon cakes, use it as syrup infused cake. Or a Starbucks copycat cinnamon coffee cake.
- For pancakes- Make cinnamon pancakes by doubling the sugar, which make it thicker, and then add it to the top of your favorite pancakes.
Storage
Store in an air tight container at room temperature or in the refrigerator for 2 months. If you doubled the recipe, the cinnamon simple syrup will crystalize more quickly than the standard recipe.
Top tip
Don't stir the syrup once the sugars are completely dissolved. This will help it stabilize and make it last longer before it starts to crystalize.

- 1 ¼ cups water
- 3 cinnamon sticks
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 teaspoon vanilla
Instructions
- Bring water and cinnamon sticks to a boil over medium high heat. Turn down to a simmer and simmer for 10 minutes. Remove cinnamon sticks. Add brown sugar and granulated sugar then stir until sugars are dissolved.
- Remove from heat and stir in vanilla. See pictures above for a visual reference.
Notes
- Store in an airtight container in the refrigerator for up to 2 months.
- Be careful not to stir once the sugar is dissolved. This will enable you to store it longer without it crystallizing.
- Make with ground cinnamon by reducing the water to 1 cup. Add the sugars and ground cinnamon, stir until the sugars have dissolved, bring to a boil then remove from heat. Allow to cool 1 minute then stir in the vanilla.
- While testing this recipe we found that the cinnamon flavor was better when made with cinnamon sticks, but you can absolutely make it with ground cinnamon.
- During the fall we love to substitute the vanilla for maple for a delicious cinnamon maple syrup.
- To make a thicker syrup for pancakes, etc., double the sugars and make as directed.
