Instructions
- Bring a sauce pan of water to a boil. Add the cinnamon sticks.
2. Boil for 10 minutes, allowing the cinnamon sticks to release it's fragrant spice. Remove the sticks.
3. Add the white and brown sugar to the cinnamon water. Stir until the sugar is dissolved.
4. Remove from heat and add in the vanilla. Add to any drink like coffee, hot chocolate, and tea.
Hint: Feel free to simmer the cinnamon sticks an additional 10 minutes for a deeper cinnamon flavor. Just make sure you add an extra ¼ cup water to make up for water evaporation.
Substitutions
Just like at Starbucks, this recipe is naturally gluten free, vegan, vegetarian, and dairy free.
- With Ground Cinnamon-Instead of using cinnamon sticks, us ¾ teaspoon ground cinnamon instead.
- Honey- Use half honey and half white sugar as a sugar substitute. Or to add a honey flavor to pair with the cinnamon.
- Reduced Sugar - While we don't recommend substituting the sugar as that is what makes this syrup a sweet liquid, you can also use your favorite sugar substitute in part or fully for a sugar free or reduced sugar syrup.

- Apple- Replace ½ the water and ½ the white sugar with apple cider. This will give it a tasty apple cinnamon flavor.
- Vanilla-Make the vanilla a stronger flavor instead of a complimentary flavor by doubling the vanilla extract.
- Rosemary - Add rosemary herb to the boiling water with the cinnamon sticks. Strain the rosemary leaves out when you remove the cinnamon sticks. Or use 1 drop food safe high quality rosemary essential oil after the syrup cools.
- Cranberry- Cinnamon cranberry is a tasty winter and Christmas flavor. Boil ½ cup cranberries with the cinnamon sticks and remove when you remove the cinnamon sticks.
- Ginger- Boil 1 inch cut of ginger to the boiling water when the cinnamon sticks are boiled. Remove when adding the sugars.
