Use a large to extra-large tortilla! We used too small tortillas, and it was hard to get all our tasty ingredients into one wrap. And it made the tortilla tear easily.
Make sure your vegetables are patted dry, like the lettuce and tomatoes, so it doesn't make the tortilla soggy.

Southwest Chicken Wrap
Ingredients
For the Chicken:
- 1 ½ pounds chicken breasts in cutlets, see note 1
- 1 Tablespoon avocado oil or other cooking oil
- 1 teaspoon chipotle chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- ¾ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon oregano
- ½ teaspoon onion powder
- 1 pinch cayenne powder optional
For the Wraps:
- 6 large tortillas see note 2
- 1 head romaine lettuce
- 15 ounce can black beans
- 1 ½ cups corn frozen, thawed
- 1 cup cherry or grape tomatoes halved
- 1 jalapeno optional, sliced and deseeded

Instructions
- Heat oil in a skillet over medium heat. Combine all seasonings together in a bowl and mix to combine. Sprinkle evenly over chicken on both sides. Place chicken in the skillet in a single layer and cook for 6-7 minutes. Flip chicken and cook an additional 5-7 minutes until internal temperature reaches 165° F. Remove and set aside for at least 5 minutes before slicing.

- Lay out your tortillas. Add lettuce, black beans, corn, and sliced chicken. Top with tomatoes, jalapeno and dressing. Roll up and serve immediately.

- You can either buy the chicken breasts already in cutlets, or cut a regular chicken breast in half horizontally.
- We love and recommend using raw tortillas that we cook at home, but you can use whatever your favorite tortilla is.

We don't recommend storing this wrap assembled, but you can for 1-2 days. Storing the ingredients separately will keep everything as fresh as possible.
