    Quick and easy Parmesan Gnocchi

    4 EASY STEPS!

    Gnocchi is one of my favorite meals. I love how it pairs well with roasted veggies, or topped with a buttery herb sauce. Quick and Easy Parmesan Gnocchi is just that, quick and easy. It's a fun way to spice up gnocchi, by adding the wonderful flavor or parmesan. AND this recipe has only 4 easy steps!

    Making homemade gnocchi doesn't have to be overwhelming. This, fool proof method will have you making delicious gnocchi in no time!

    The first step in making this delicious gnocchi, is mashing potatoes. I like to boil chopped up, peeled, potatoes in small cubes. This helps them cook faster. You want to make sure you boil sliced potatoes until they are very tender. If they are at all hard, they may leave small potato chunks in your gnocchi. We want to make sure the gnocchi batter doesn't have potato chunks.

    I don't get super fancy with my gnocchi shapes. After dividing the dough in fourths, I roll each piece into a long snake. Using cooking shears (such as these), I cut the dough snake into ½ inch pieces. That's it! The shears create a clean simple edge without taking the time to shape each piece.

    Boil a pot of water and place dough bites at the bottom. Make sure they aren't overlapping. You will do several small batches. When gnocchi is fully cooked, it will float to the top. I pull each gnocchi out with a slotted spoon in order to avoid gathering excess water.

    Leftover mashed potatoes? Even better!

    I often make Quick and Easy Parmesan Gnocchi when I have leftover mashed potatoes from a previous meal. This cuts the time in half because I don't have to prep any potatoes. Keep in mind, when doing this, that you may be bringing additional flavors into your gnocchi, depending on how you spiced your mashed potatoes. It only can add deliciousness to your meal. Note though, you may want to cut back on spices such as salt and pepper if your mashed potatoes are already salted.

    Ingredients
     

    • 2 ½ cup mashed potatoes*
    • 2 ½ cup flour
    • 1 egg
    • ½ cup parmesan cheese
    • ½ tsp salt
    • ½ tsp pepper

    Instructions
     

    • In a large bowl, add mashed potatoes*,  and flour. Add egg, parmesan and salt and pepper. Mix all together until dough is formed in a ball. You may need to use your hands to work the dough.
    • Divide the dough into 4 parts. Roll each part into a snake. With kitchen shears, cut dough into ½ inch long pieces. 
    • Stove top, boil another pot of water on high heat on the.  Once water is boiling, add a single layer of gnocchi bites to the pot. When done, gnocchi will float to the top.  Approximately 3 minutes. Scoop gnocchi out into a bowl with a slotted spoon avoiding any excess water. 
    • Top gnocchi with your favorite cheese, herb and butter sauce, or roasted veggies. 

    Notes

    1. *Need a quick easy way to mash potatoes?
      1. Peel and cube potatoes into small pieces. 
      2. Place a pot of water on the stovetop to boil. Once water is boiling, place potato pieces in the pot and boil until tender. About 10 minutes. Drain potatoes and place in a large bowl.
      3. Mash tender potato pieces with a potato smasher or hand mixer until smooth.
    2. Sprinkle gnocchi bites with flour to avoid sticking to one another. 
    3. Have leftover mashed potatoes? Perfect! You may need to adjust the salt and pepper or omit altogether depending on how your mashed potatoes are seasoned.
