How To Make Fruity Pebbles Cheesecake
Follow these step-by-step photos for the best recipe experience. The photos will help you get the crust just right.

- Over medium heat, melt butter and add marshmallows. Once the marshmallows are melted, add the fruity pebbles and mix to make a Rice Krispies texture.

- Press the mixture into a round 9-inch pie pan. Use parchment paper to press down to make the crust.

- Mix the softened cream cheese with the powdered sugar. Once it's a smooth mixture, add in the Cool Whip. Mix with an electric hand mixer until smooth.

- Fold in extra fruity pebbles until evenly dispersed. Add the cream cheese mixture to the fruity pebbles crust.

- Finish the pie off by topping it with more fruity pebbles for a fun look!
Hint: Make sure to soften the cream cheese before so it has a smooth consistency when mixed. Let it sit out on the counter for 30 minutes prior to making the cheesecake.
Common Mistakes
The first time I made this pie, I didn't take the time to soften the cream cheese. The no-bake fruity pebbles cheesecake mixture was chunky, and it was really hard to spread in the pie crust. Once I softened the cream cheese, it was so much easier to work with and made a great pie.
Top Tip
Don't overcook the marshmallows when making the fruity pebbles crust. It will make the crust brittle and hard, instead of soft and delicious.

No-Bake Fruity Pebbles Cheesecake
Equipment
- 2 medium mixing bowls
Ingredients
Filling
- 8 ounces cream cheese 1 block softened
- 1 cup heavy whipping cream *for convenience use 1 container of cool whip instead
- 1 teaspoon vanilla
- ½ cup powdered sugar
- 1 cup fruity pebbles
Crust
- 2 Tablespoons unsalted Butter
- 1 ½ cups Mini Marshmallows
- 2 ½ cups Fruity Pebbles
Instructions
Fruity Pebbles Crust
- Prepare a 9 inch pie pan and parchment paper. Set aside.
- In a large sauce pan, over medium heat, melt the butter. Add in the mini marshmallows and stir until just melted. Add in the fruity pebbles and mix. This will be sticky! This is the same process as making Rice Krispy treats.

- Immediately transfer the marshmallow and fruity pebble mixture into the 9 inch pie pan. The mixture sets quickly making it difficult to spread if you wait too long. With the parchment paper, smash down the fruity pebbles to make a crust. The parchment paper will help the mixture to not stick to your hands. Make sure to press down hard so the fruity pebble marshmallow mixture compresses.

- Set aside and prepare the filling.

Cheesecake Filling
- In a large mixing bowl, add softened cream cheese, vanilla, and powdered sugar. Mix with an electric hand mixer until smooth.

- In a separate bowl whip the heavy cream with an electric hand mixer until stiff peaks form. Fold and gently mix the cream cheese mixture with the whipped heavy cream until smooth. *see notes if using cool whip instead! See photos above to check the texture.

- Gently fold in fruity pebbles. Mix until the fruity pebbles are throughout the cream cheese mixture.

- Scoop the cheesecake filling into the prepare fruity pebble pie crust.

- With a rubber scrapper, smooth the mixture evenly in the pie crust. Top with additional fruity pebbles. Chill for at least 1 hour before serving.

Notes
- Use a container of cool whip instead of heavy whipping cream. Use half the powdered sugar to make it less sweet!
- Rice Krispies - instead of fruity pebbles, use regular rice Krispies for the crust.

Storage
Store leftover cheesecake in the refrigerator for 3-4 days. The fruity pebbles throughout the cake will lose their crispy texture after being in the refrigerator. The cheesecake will taste great despite the softer texture.
You can freeze this no-bake dessert for up to a month. Serve frozen or thaw in the refrigerator. Be aware that there may be texture changes to the fruity pebbles.
