Warmer days ahead, here we come. I don't know about you, but this spring has been colder than I'd like and I'm in need of some hot sunshine! One of my favorite things about summer is all the salads that enter our dinner menu. A family favorite is Simply Easy Greek Salad. It's simple, it's delicious, and it can stand alone or be paired with pita bread!

What Dressing goes with Simply Easy Greek Salad?
This loaded green salad is mixed together with a mouthwatering Tzatziki Dressing. Unlike traditional tzatziki sauce, this dressing is a little runny. This is so it mixes well with all of the vegetables and greens in order to become fully incorporated.
It's an easy sauce to make. All you need to do is place all the ingredients in a a food processor or blender and mix together until almost smooth. There may be some chunks left from the cucumbers, and that's ok. It adds to the texture and fresh feel!
Mix this delicious dressing in with the greens, and vegetables right before serving. I like to wait to mix it all together in order to maintain its freshness. When I know I'm not going to eat it all at once, I often set aside dressing and vegetable mixture in order to mix together later. Top with feta!
My favorite way to eat this delicious salad is with a pita. You can go vegetarian style and only have the salad and pita, or add your favorite Mediterranean spiced chicken or beef. We like to eat it with a soft pita, as opposed to a pita pocket, and fold the salad in the pita as you would a taco. You can't go wrong either way.

Simple Greek Salad is a perfect summer meal. Each bite has flavorful vegetables paired with dill, vinegar and a cucumber sauce.
Ingredients
Greek Salad
- 2 cups romaine lettuce, chopped
- 1 cup cherry or grape tomatoes, chopped
- ½ cup onion, chopped
- ½ cup cucumber, chopped
- ½ cup kalamata olives, halved or quartered
- ½ cup feta cheese
- 2 tbsp Olive Oil
- 2 tbsp Red Wine Vinegar
- ½ tsp salt
- black pepper to taste
Tzatziki dressing
- ½ tsp crushed garlic
- 1 tsp dried dill
- 2 tsp lemon juice
- 1 cup plain yogurt
- ½ cup cucumber, chopped
- ½ tsp salt, to taste
Instructions
- Chop all of the vegetables and romaine lettuce and mix together in a large bowl.
- In a small bowl mix together olive oil, red wine vinegar, and salt and pepper.
- Pour on top of the vegetables and mix all together. Set aside
- In food processor add all ingredients for the Tzatziki dressing. Pulse until mostly smooth. Some cucumber chunks may remain, and that's ok.
- Mix the vegetables and tzatziki dressing until fully incorporated.
- Top with feta cheese.
- Serve on it's own or on top of a pita
Notes
- Easily can omit kalamata olives if needed.
- Set aside unmixed salad and dressing if you aren't planning to eat the whole salad in one sitting. This helps maintain the freshness.
