Apple Cider Vinaigrette
Ingredients
- ¼ cup apple cider vinegar
- ¼ cup extra virgin olive oil I like to use a mild one in my dressings
- 2 Tablespoons lemon juice fresh squeezed is always best
- 2 teaspoons maple syrup or honey
- ½ teaspoon minced garlic
- salt and pepper to taste I use about ¼ teaspoon salt and a few grinds of pepper
- ¼ teaspoon dijon mustard optional, see note 2

- Place all ingredients in a jar and shake vigorously for at least 1 minute until emulsified. Alternatively, you can put it all in a blender (I like to use the single serving cup size) and blend on high for at least 30 seconds.

- Store in an airtight container in the refrigerator for up to 1 month.

Notes
- If the flavor of the dressing is too strong, add a little more olive oil to dilute it further. If it's too bitter, add a little more syrup.
- The dijon adds a little zing and we like it, but if you don't like mustard in your dressings, skip it.
