Cinnamon Roll french toast Casserole may just be your new favorite lazy day breakfast recipe. A family favorite, this quick and easy breakfast casserole is made with Pillsbury dough and heavy cream topped with fluffy cream cheese frosting. It's so tasty!
This is quite similar to our Tiktok Cinnamon Rolls, it just has the addition of eggs giving them a French toast taste. This would be a fun to take to an Easter brunch or have for a Christmas dinner.
My family loves when I make this recipe. It has become a fun way to make canned cinnamon rolls deluxe. It comes together so fast, I don't have to plan ahead or even make ahead of time because it's that quick and easy. - Heavy cream - the heavy cream works to make the cinnamon rolls so soft and tender. It makes a big difference in the texture. We found while recipe testing that you can use milk or half and half, but the rolls didn't have quite the same tenderness.
- Cream cheese- During recipe testing, we felt like the icing that came from the can was really lacking. It needed more depth. Taking just 2 minutes to beat it with some cream cheese, vanilla and powdered sugar made a huge difference in the overall breakfast casserole.
- Canned Cinnamon Rolls- Our personal favorite to use is Pilsbury. They have the best texture compared to other brands, and off-brands.
- Cinnamon- Added cinnamon to the egg mixture enhances the flavor.
- Eggs- Eggs help the casserole stick together. It also gives it a more french toast taste, which we love! Make sure to beat the eggs completely or there will be chunks of cooked egg whites in your casserole.
- Brown Sugar- Just like cinnamon rolls made from scratch, brown sugar is used in this recipe for added flavor.

How to make Cinnamon Roll Casserole
This easy recipe is a great beginner baking recipe. Follow the steps and pictures below for the best results!
- Cut the cinnamon rolls into 6-8 pieces. Place the cut pieces into a greased 9x13 pan. Sprinkle a mixture of brown sugar and cinnamon over the top of the cut pieces.
2. In a mixing bowl, combine the eggs, heavy cream and vanilla. Mix until smooth.
3. Pour the egg and heavy cream mixture over the top of the cut dough pieces. Bake for 30-35 minutes at 350 *F.
4. While the casserole cooks, make the frosting. Enhance the icing packets that come with the cinnamon rolls by mixing them with powdered sugar, vanilla, and cream cheese. Beat until smooth.
5. Cool the casserole for 5-10 minutes and then pour the icing over the top. Serve warm and enjoy!
Hint: If the cinnamon rolls are browning too quickly, make a tent with tin foil on top and continue baking.
Substitutions and Variations
- Bacon- Top with 1 cup cooked and chopped bacon for a savory addition.
- Cherry- Skip the brown sugar and add 1 cup cherry pie filling with chopped cherries over the top, then pushed down into the cinnamon roll chunks.
- Blueberry- Top with 1 ½ cups of blueberries and press down into the roll chunks. Or try this blueberry french toast bake.
- Homemade-This can be made with homemade cinnamon roll dough. Use the amount you would normally bake into a 9x13 pan.
- Overnight/Make Ahead- Since this is made using store-bought cinnamon rolls, it only takes a few minutes to assemble. However, this can be made overnight. Simply assemble, cover, and refrigerate. Then bake as directed in the morning.
- Apple- Skip the brown sugar and add 1 cup apple pie filling with chopped apples over the top, then push down into the cinnamon roll chunks.
Crockpot
Looking for a crockpot or slow cooker option? Assemble the recipe into your crockpot. Cook on low for 2- 2 ½ hours until the dough and the egg mixture is cooked through. Top with icing and serve warm.

It's important to make sure the egg and heavy cream mixture is mixed until smooth. While we were recipe testing, the egg whites didn't fully mix in with the heavy cream and they cooked in chunks throughout the cinnamon roll french toast casserole. When the egg whites are smooth, you won't have this issue!
Storage
Store prepared and cooked casserole in the refrigerator for 3-4 days. Make sure to cover it with plastic or put it in an air-tight container. When you are ready to eat, reheat in the oven or the microwave until hot all the way through.
Top tip
Want silky smooth frosting? Make sure use room-temperature cream cheese. Set the cream cheese out 30 minutes prior to using.

For the Cinnamon Roll Casserole
- 2 - 17.5 ounce cinnamon rolls I used Pillsbury grands
- 4 eggs
- ⅔ cup heavy cream
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- ¼ cup brown sugar
For the Icing:
- the icing that was included with the cinnamon rolls
- 3 Tablespoons cream cheese at room temperature
- ½ teaspoon vanilla
- ¼ cup powdered sugar
Instructions
- Preheat the oven to 350° F. Open cinnamon rolls and place the icing to the side to use later.
- Lightly grease a 9x13 baking dish. Cut cinnamon rolls into the dish. If using Grands size, cut each roll into 6-8 pieces. If using normal sized rolls, cut into 4 pieces. Combine brown sugar and cinnamon together in a bowl. Sprinkle over the cinnamon rolls. See photos above for a visual guide. Beat eggs with a whisk on medium high speed until completely mixed and no egg white clumps remain. Add heavy whipping cream and vanilla and mix until combined. Pour over the cinnamon rolls chunks.
- Bake 30-35 minutes until cooked through. Make icing by beating the cream cheese, making sure no lumps remain. Add the icing packages, vanilla, and powdered sugar and mix until combined. Allow casserole to cool for 5-10 minutes, drizzle with icing and serve warm.
Notes
- This is an easy and flexible recipe that can easily be adapted to personal preferences. See our variations above for some fun ideas with pie filling.
- If using 12 ounce cans of cinnamon rolls, use 3 to get a similar amount. Since those rolls are smaller, cut into fourths instead of sixths.
- You can absolutely just use the icing that comes with the cinnamon roll cans. We think that taking just a couple minutes to mix them with some cream cheese and a little powdered sugar makes a huge difference in flavor.
- It's important to use room temperature cream cheese and to beat it until it's perfectly smooth. Doing those 2 things will ensure you don't have any cream cheese lumps in the icing and that it is perfectly smooth.
- If your casserole starts to look more brown than you want, tent it with some aluminum foil to continue baking.
- It's important to make sure there aren't any clumps of egg white in the egg mixture. Otherwise you'll have some bits of cooked egg white throughout the casserole that are a little unpleasant.
