This Japanese American inspired recipe is a good seasoning to add to ramen, even instant noodles. It hits all of those tasty flavor profiles you love from the packet seasonings. But it's made from scratch at home so it's a much better alternative.
We are loving knowing how to make this chicken flavored seasoning for ramen. I love to add it to a bowl with noodles, stir fry vegetables and a protein like shrimp or chicken.

The great thing about this recipe is its use of pantry staples. Most ingredients you probably already have on hand!

- Coconut Sugar- when testing this recipe I kept coming back to it just missing something. After a lot of trial and error, I concluded it needed just a touch of sweetness. I didn't want to add straight sugar, so added a touch of coconut sugar and there it was! A subtle hint of sweetness to tie all of the flavors together.
- Bouillon - For a chicken flavor use chicken bouillon. You can also use beef. You can substitute for the powder or a homemade bouillon.
- Seasoning- A mixture of garlic powder, onion powder, ginger, paprika, and black pepper help to create the iconic ramen flavor profile.
- Parsley- Use dried parsley, not fresh.
- Apple cider vinegar- Add the apple cider vinegar to the bowl of ramen when served. It does not mix in with the dry ingredients, it will ruin the seasoning.

How To Make Homemade Ramen Seasoning
Follow the step-by-step process photos for best results. This is a quick and easy recipe to make!

Combine all spices, coconut sugar, herbs, and bouillon into a small mixing bowl.

Mix the ingredients until they are evenly distributed.

When ready to eat, sprinkle the ramen seasoning into the bowl or ramen. Add the apple cider vinegar.
Hint: Us a ninja blender, or another high-speed blender to grind up the chicken bouillon.
Substitutions
- Beef- This is a chicken broth recipe but you can make it beef by using beef bouillon. Top with sliced steak.
- Low sodium- Ramen is typically high in sodium. When you make your own you have more control. Use a low sodium bouillon.
- Spicy- Spicy ramen is one of my favorites. Make this seasoning spicy by adding ½ teaspoon crushed red pepper flakes. You can even top the bowl with your favorite hot sauce or sriracha.
- Vegan- For a vegan dish use vegetable bouillon.
How to Serve
Make a large batch so you have some on hand for another day. triple or even double the recipe if you want.
Serve this in a bowl of ramen noodles, vegetables, and a protein like chicken or beef. These are our favorite noodles to use, Millet and brown rice ramen. We've even used them in our Peanut Butter Ramen recipe.
Storing Ramen Seasoning
Store mixed leftover seasoning in an air-tight container at room temperature. Make sure it is airtight. I accidentally let a small amount of moisture in once and it clumped together. This homemade mixture has a shelf life of up to 1 month.

Top tip
If you aren't a fan of the high sodium or taste of chicken bouillon we recipe tested with lots of different options. Try leaving out the crushed bouillon and adding chicken flavored better than bouillon to the bowl. It may need a dash of salt depending on your taste preferences.

Ramen Seasoning Recipe
Ingredients
- 2 cubes chicken bouillon can substitute with powder or homemade, see notes below
- 1 Tablespoon garlic powder
- 1 Tablespoon onion powder
- 2 teaspoons parsley
- 1 teaspoon coconut sugar see notes for alternatives
- ½ teaspoon ginger
- ½ teaspoon paprika
- ¼ teaspoons black pepper
- ½ teaspoon apple cider vinegar this doesn't go into the dry mix, but we recommend adding it into your ramen when making it for the best flavor.
Instructions
- Mix bouillon, garlic powder, onion powder, parsley, coconut sugar, ginger, paprika and black pepper together in a bowl. Use around 1 or more teaspoons per bowl of ramen for flavor. Add apple cider vinegar in at the same time as the water for best results.
Notes
- I used my ninja smoothie mixer to grind up the bouillon cubes.
- Replace the bouillon cubes with powdered or homemade. Or, leave it out then while making the bowl of ramen add about ¼ teaspoon Better Than Bouillon.
- For the perfect flavor, add in ½ teaspoon apple cider vinegar at the time of making your bowl of ramen. This gives it the perfect flavor that combines all the other flavors and makes it perfection.
- Coconut sugar is less sweet than regular sugar. Use ½ teaspoon regular granulated or brown sugar instead of coconut sugar.
- I like to make a bowl of ramen using a frozen veggie mix and left over shredded chicken. It's great topped with fresh green onions.
- We love a little spice in our ramen! To make yours spicy, add ½ teaspoon red pepper flakes to the mixture, or, add a few dashes of sriracha when making your ramen.
