    MMMMM mmmm mmmmm! I love Pineapple Fried Rice!

    This dish will always remind me of Cambodia and Angkor Wat. In 2016 Jacob and I went to Cambodia (amazing country that I highly recommend!). In Siem Reap they have a night market every night and we went there for dinner every time! It was so fun to see and try different foods and enjoy the Khmer culture. Jacob even ate a tarantula!

    Our first night there we stopped at a tiny restaurant and I ordered the pineapple fried rice. It was served in a pineapple and was so mouth-watering good. The pineapple adds the perfect tang to fried rice! I couldn't stop thinking about it so much so that I ordered it again 5 days later on our last night. I just had to have it again!

    This is a pretty easy recipe and comes together quickly. Don't forget to make your rice ahead of time. You'll want to use cooked and chilled rice for this. It's also a great way to use up leftover rice. Using refrigerated rice will keep the rice from becoming soggy and mushy. I've learned this the hard way.

    How to Make Pineapple Fried Rice

    You'll start by cutting up the vegetables and pineapple. Cut the pineapple in half, then cut around the edges with a knife and scoop out the middle with a spoon. You'll dig underneath with the spoon, and it should lift out in one piece that you can cut into chunks.

    Next, scramble the eggs then put them to the side. Then you'll cook the onion, garlic and carrots in a fry pan for 5 minutes, then add the raw chicken and bell peppers and cook until the chicken is done and the vegetables are tender. To make this easier, you can use a frozen peas and carrots mixture (or even a stir fry vegetable mix!). If you do this, don't add the carrots until later when you add the frozen peas or they will get mushy! Once those are done cooking, add the rice. Mix the sauce ingredients together in a bowl and pour over the whole thing. Add frozen peas, pineapple and scrambled eggs and heat through. Serve in the pineapple and enjoy!!

    Description

    Cambodia inspired fried rice, served in a pineapple!


    Ingredients

    Scale
    • 1 pineapple
    • 2 eggs
    • 2 Tablespoons vegetable oil
    • 1 Tablespoon sesame oil
    • 6 green onions, sliced thinly- 4 for the fried rice and 2 for topping
    • 2 teaspoons minced garlic
    • ½ cup shredded carrots
    • 1 bell pepper chopped
    • 1 cup cubed chicken
    • 2 cups cooked and chilled rice
    • ½ cup frozen peas
    • chopped green onions for topping
    • Sauce:
    • 2 teaspoons sugar
    • 1 Tablespoon fish sauce
    • 1.5 Tablespoon soy sauce
    • 1.5 teaspoon rice vinegar

    Instructions

    1. Cut pineapple in half, then cut around the middle of the inside (see picture above) and dig underneath with a spoon and scoop out. Cut middle up into chunks.
    2. Chop onions and bell pepper and shred carrots.
    3. Heat oil in a fry pan and add onion, minced garlic, and shredded carrots. 
    4. Cook for 5 minutes
    5. Add chicken and bell pepper and cook until chicken is done and vegetables are tender. About 5 minutes. While cooking, whisk together ingredients for the sauce
    6. Add chilled rice and pour sauce over the top. Add peas, pineapple chunks and eggs and stir to combine and heat through
    7. Serve in hollowed out pineapple and top with chopped onions, if desired
    8. Enjoy!

    Notes

    This makes great leftovers! Store in the fridge for up to 5 days
