The recipe can be made as is for a fun summer treat, or you can add white chocolate chips, milk chocolate chips, or sprinkles for an easy Valentine's Day dessert. No matter what you decide, these cookies taste good and look cute and festive.
Which cake mix brand is best? Through trial and error, we found that between Pillsbury, Duncan Hines, and Betty Crocker, Pillsbury and Duncan Hines make the best cake cookies. Betty Crocker has less cake mix in the box, so if you use that brand, be sure to add 5 tablespoons of oil instead of 6 ½ teaspoons cornstarch.

What are Strawberry Cake Mix Cookies?
With only three ingredients, you can't go wrong. Use your favorite cake mix, room temperature eggs, and vegetable oil for the best baking experience.

- Cake Mix- Use strawberry cake mix. You'll want to use Duncan Hines, Pillsbury, or your favorite store brand. Make sure it's 15.25 oz. Betty Crocker cake mix is smaller, so you will need to adjust the recipe.
- Cooking Oil- Vegetable oil is strongly recommended. If you have to use another oil, avocado oil and olive oil are the next best options. Try not to use butter for this recipe. It will make the texture crumbly.
- Egg- Room temperature eggs are always best for baking. They help the cookie rise. Set the egg on the counter 30 minutes before baking.

How to Make Strawberry Cookies With Cake Mix
Learn how to bake Strawberry cookies with cake mix with these easy to follow steps. Refer to the photos for extra help.

- In a medium sized mixing bowl, whisk together the oil and eggs.

- Add the bag of cake mix. Mix until just combined. Overmixing will result in crumbly cookies.

- With a cookie scoop or your hands, create dough balls and place them on parchment paper. Bake for 7-10 minutes at 350°F.
Hint: Use parchment paper or a silicone baking mat to help the cookies bake evenly and not stick.
Substitutions and Variations
These cookies are really fun to experiment with. Try some of these fun add-ins.
- With fresh strawberries- Top with a glaze or frosting, and then add fresh strawberries. Another fun option is chopping ½ cup fresh strawberries. Blot them dry, let the strawberries sit out to dry for at least 1 hour then blot again. Gently fold into the mix at the end and bake as usual.
- Crinkle- Cake mix cookies make the best crinkle cookies. Simply roll the dough ball in powdered sugar.

How to Make the Crunch Topping:
For that signature crunch, mix together:
- 7 Golden Oreos, crushed
- 2 Tablespoons strawberry Jell-O powder
- 1 ½ Tablespoons melted butter

Get Creative!
We've had so much fun trying different add-ins and variations of this recipe. One of our favorites is dipping the cooled cookie in melted white chocolate and then topping the melted chocolate with Valentine's Day sprinkles. Try red, white, and blue sprinkles for the 4th of July or green for Christmas.
You can also make these into a sandwich cookie with creamy cream cheese frosting in the center. Add strawberry glaze on top, or stir in white chocolate chips.
Storage
Store baked cookies in an airtight container for 3-5 days. They are best the first 1-2 days after you bake them.
Can I freeze these cookies? Like most cookies, yes! You can make the dough balls and freeze them for a later date. Be sure to thaw them in the refrigerator before baking. Freeze the baked cookies to enjoy for up to 1-2 months later. Enjoy them frozen or thawed.

Top tip
You can switch the oil for butter. This will give the cookies a richer taste but will change the texture quite a bit. If you're simply trying to avoid vegetable oil, we recommend avocado or olive oil instead.

Strawberry Cake Mix Cookies
Ingredients
- 15.25 oz strawberry cake mix see note 1 for different sizes/brand info
- 6 Tablespoons vegetable oil or avocado oil
- 2 eggs

Instructions
- Preheat oven to 350° F.
- Whisk together the eggs and oil in a medium sized mixing bowl. Use a spatula and stir in the cake mix. Form dough balls with your hands (try dampening them if the dough is too sticky) and place on a parchment lined baking sheet. Bake for 7-10 minutes. After the edges have set and the tops turn matte, a minute or 2 later they will puff up more and start to crinkle. That's when you know they are done. Remove from oven and allow to cool on the baking sheet for 5 minutes before removing. Enjoy!!
Notes
- I tested this recipe with Duncan Hines, Pillsbury, grocery store brand and Betty Crocker. My favorites were Duncan Hines and Pillsbury. Betty Crocker was my least favorite and came in a 13.25 oz box (most others are standard 15.25oz boxes). After a lot of testing I found that using 5 Tablespoons of oil instead of 6, and adding ½ teaspoon corn starch made them much better.
- You can also use a cookie scoop to spoon the batter onto the baking sheet. I recommend using a 1.5 Tablespoon size.
- These cookies are so fun to play around with. Try dipping in melting chocolate then topping in festive sprinkles for a holiday (pink and white for Valentines, blue for the 4th of July, green for Christmas). These are also great with ½ cup white chips stirred into them before baking.
