    Air Fryer Sweet Potato Cubes

    Sweet Potato cubes made in the air fryer are so delicious. Crisp on the outside, tender on the inside. They are the perfect morsels to add to a salad or burrito or quinoa bowl. They are highly nutritious and promote great gut health!

    We love to use these delicious little sweet potato chunks in our Sweet Potato Black Bean Tacos and Black Bean Sweet Potato Quinoa Bowl

    Basically what I'm saying is: you need these crispy on the outside, tender in the middle little pieces of heaven. You can also use this recipe for the frozen sweet potato chunks found at stores.. All you'll do is just cook them a little longer, shaking the basket every 4-5 minutes until crisped to perfection.

    Ingredients

    • sweet potatoes
    • avocado oil or similar
    • salt
    • pepper
    • cumin

    Instructions

    Preheat air fryer to 450*F. Peel roughly one pound of sweet potatoes. If you're off by an ounce or 2, it's fine! If the potatoes are giant, this will be about 1 potato, if they're small it could be as many as 3-4. Medium.. about 2. You get the idea. Cut the sweet potato(s) into ½" cubes and place in a medium/ small bowl. Add the oil and toss or mix with a spatula to evenly coat the sweet potatoes. You don't need a lot of oil to make these, but you do need some or the outsides will burn. If you like the outsides extra crispy and bubbly- double the oil amount. Add the spices, and give them another toss or mix with a spatula to evenly coat. Place in the air fryer. Cook about 10 minutes total, shaking the basket around minute 5-6. Not all air fryers are created equal, (we have the NINJA XL that is also a grill) so check again at 8 minutes. The outside of the potatoes will turn dark and a little bubbly in places when they're done.

    Variations

    • Spicy - Add 1 teaspoon red pepper flakes to the other spices for a delicious and spicy fun!
    • Curry - Omit the other spices and substitute for curry powder for some yummy curry sweet potatoes.
    • Fajita - substitute fajita seasoning for the other spices for another delicious flavor.

    Tips & Tricks

    These store great in the refrigerator in an airtight container for up to 5 days. I enjoy them cold. To serve hot, place in a preheated air fryer (again to 450*) for 2-3 minutes.

    If using frozen sweet potato cubes, use them frozen and make the same as directed, just cook an additional 2-5 minutes.

    For sweet potato lengths, simply cut into strips no bigger than ½" wide, and cook with the same method, but planning on a slightly longer cook time.

    Feel free to omit the cumin, half the salt and add 1 teaspoon cinnamon/ sugar mixture for a fun variation.

    Try these with some pumpkin snickerdoodles or pumpkin chocolate swirl bread for a fun fall dessert!

    Ingredients
     

    • 1 pound sweet potatoes could be anywhere from 1 giant one to 2 medium-ish to 3-4 small
    • 2 teaspoons olive or avocado oil
    • ½ teaspoon salt- I used Pink Himalayan
    • ⅛-1/4 teaspoon pepper
    • 1 teaspoon cumin or 2 teaspoons for a full punch of great flavor

    If using frozen sweet potato chunks or frozen sweet potato fries, keep them frozen and follow the directions above, adding 2-5 minutes to the cook time.
    Omit the cumin, half the salt and add 1 teaspoon cinnamon/sugar mixture for a fun variation.
    For air fryer sweet potato fries, follow the directions above, only cut them into strips no wider than ½" wide. Plan on a little bit longer time in the air fryer. (2-3 minutes)
