    Soft and Chewy Breakfast Power Cookies

    Breakfast foods are a family favorite. On Saturday mornings we always try our best to make a fun and special breakfast. It's a great way to start our weekend off. But let's talk about that week day. I know our week days consist of running around like crazy, trying to get everyone out the door. Insert Soft and Chewy Breakfast Power Cookies.

    These "cookies" are a great way to start your day. Soft and Chewy Breakfast Power Cookies are great for grab and go while still capitalizing on high proteins to get you through the morning. It taste like peanut butter cinnamon oatmeal in cookie form. Yum, two of my favorite flavors!

    Inspired by our Peanut Butter Energy Balls and our Crunchy Cinnamon Granola with Egg Whites.

    What to look forward to!

    • Peanut Butter
    • Craisins
    • Walnuts-optional, but delicious
    • Cinnamon
    • Ground flaxseed- a protein power food!

    How to assemble Healthy Breakfast Cookies

    First mix your wet ingredients in a stand mixer. Once fully incorporated, mix in your dry ingredients leaving the nuts and craisins for last. Saving the nuts and craisins for last helps

    The batter comes out thick. These are drop cookies, so don't plan on rolling them out like tradition cookies. Drop about ¼ cup, unpacked, dough on a parchment lined cookie sheet. I love my silicone mat pan liners that act as reusable parchment paper. They are easy to use and best of all, easy to clean!

    Again, unlike tradition cookies, these Soft and Chewy Breakfast Power Cookies, aren't going to spread across your cookie sheet. They are drop cookies.

    I love that everyone in the family can enjoy this breakfast cookie. You can easily double or triple this recipe as needed. I know our family needs to! Substitute craisins with another dried fruit, or substitute walnuts for another nut such as almonds.

    Great for camping and other adventures!

    Our family is always looking for good camping and adventure breakfasts that get us through the day. These cookies are great just for that! They don't need to be refrigerated and are a great source of protein and nutrients.

    Description

    Breakfast Power Cookies are a grab and go breakfast. Packed with oats, nuts, and craisins. An irresistible peanut butter and cinnamon flavor.


    Ingredients

    Scale
    • ½ cup peanut butter
    • 3 tbsp butter, softened
    • ⅓ cup honey
    • 1 tsp vanilla
    • 2 eggs
    • ¼ cup ground flaxseed
    • 2 cup oats
    • 2 tsp cinnamon
    • ¼ tsp salt
    • ½ cup nuts (walnuts)
    • ½ cup craisins

    Instructions

    1. Preheat the oven to 350 degrees
    2. In a stand mixer combine butter, peanut butter, and honey. Mix until smooth.
    3. Next add vanilla, and eggs. Mix until fully incorporated.
    4. Next add ground flaxseed, oats, cinnamon and salt. Mix together. The mixture will be very thick.
    5. Add in nuts and craisins and mix until throughout. 
    6. Drop large spoonfuls on a parchment lined baking sheet. They will not spread.
    7. Bake for 8-10 minutes

    Notes

    1. Substitute walnuts for another nut like almonds. Or omit completely if needed.
    2. Try another dried fruit, like dried blueberries, to mix things up!

      I made a giant batch of these on Monday and used them as a grab-and-go breakfast for my kids all week long!! They were easy, tasty and a total hit!
