Summer is here! Is anyone out there as excited as I am? Along with the fun trips, no school, pool days, camping trips, and of course warm and sunny weather, I am obsessed with the food of summer. Tin foil dinners, cook outs and good desserts here we come. One of my all time favorite campfire treats is S'mores.
Sitting around an open fire with friends and family is the best. What better way to recreate that summer feel than having S'mores in cookie form!?
Toasted Marshmallow S'mores cookies will become an instant family hit. They are so moist, chewy, and delicious. They capture all those wonderful summer feels in one single cookie. They'll be gone faster than you want!
How to make Toasted Marshmallow S'mores Cookies
Toasted Marshmallow S'mores Cookies are super simple! It's always a win when you can have something delicious and simple.
The golden ticket that makes these cookies spectacular is the addition of graham cracker powder and honey. They give the cookies the wonderful feel of a real S'mores. Making the graham cracker powder is super simple. With a small food processor(I love this one!), pulse 4-6 graham cracker rectangles until they are a powder. Small chunks may remain and that's ok. You'll add 1 cup of this graham powder when you add the flour to the dough.
Once the dough is formed, it's time for the fun part. Getting that toasty marshmallow look! Make the dough into small balls and place them on parchment paper or a silicon mat. I love these ones, they are so easy to clean and are waste free!
Make a small indentation with your thumb and place 3 marshmallows in the indentation. The marshmallows should stay on the cookie. Make your indentation a little bigger and deeper if the marshmallows aren't staying.
Bake the cookies for 10 minutes. The marshmallows will get a golden, toasted look, my favorite!Print
