These chocolate caramel brownie cookies are so fudgy and insanely delicious! They use a brownie mix from a box and minimal ingredients, so they come together really fast! They're impossible to mess up and melt in your mouth. They have that wonderful crackly papery type top that brownies have that we love to love. The caramel and chocolatey fudgey goodness is perfection. Have a cookie party and serve up some lemon crinkle cookies, s'mores cookies, strawberries and cream cookies. How to Make Caramel Brownie Cookies
Preheat the oven to 350. Then, combine the brownie mix and flour into a mixing bowl. Whisk together to combine. Add eggs, oil and water and mix! If you have a stand mixer, these work great in a stand mixer. If you don't they also come together with a spatula. Using a hand mixer isn't as recommended- even though they mix together quickly, my motor overheated- it was a little too hard on it. Mix until well combined then add in the caramel bits and mix again. Scoop out onto a cookie sheet into 1.5" balls. Bake for 8-11 minutes. Start checking at 8 minutes, as soon as they look like a brownie top, they are done! Be careful not to over bake or they will be dry.
Tips and Tricks
These can be a little hard to mix, and if you are a cookie baker, as you mix it might seem like you're doing something wrong, but keep going! It will come together just right.
Storage
These store like most cookies. Store in an airtight container for up to 5 days. Like most cookies, they are best fresh or eaten within 2-3 days. The baked cookie doesn't freeze very well, consider freezing the dough instead!

- ⅓ cup flour

- 1 Tablespoon water
- ⅔ cup caramel bits

Hi Gail! Yes, you could absolutely make them in a mini muffin pan. If you have a non-stick, you won't need to grease it, but otherwise I'd say definitely grease it. 🙂
